sweet AND sizzling selections
It all started when I couldn't find a hot sauce that suited me. I wanted a peppery taste, but not too vinegary, not too spicy, and a lingering aftertaste that didn't blow my head off.
Last year, I grew Habanero and Carolina Reaper pepper plants in my garden. This led me to research and adjust a few recipes until I found ones I like very much.
I handcraft my sauce in micro-batches, use garden-fresh tomatoes and peppers, and use good quality vinegars. All this and the addition of delicious, locally-grown peaches make my PEACH FIRE sauce.
Then a local farmer sold me a whack of Naga Viper Peppers (super-hot) and WASP KILLER was born - a hit of peppery goodness! Actually the name came from a test batch made in my backyard that a wasp was dumb enough to land in… instant death.
Finally, PIÑA COLAVA was born out of the fear that hot sauce is "too hot". So I created something with a hit of sweet from grilled pineapple and Habaneros. A sweet hit of fire.
Fresh-tasting, fiery fireworks of flame-forged flavour.
Oh and keep it in the fridge.
